These easy oven roasted potatoes are quick to put together, and then you simply pop them into the oven and you will have a side dish everyone will request again. BROCCOLI TOTS  Broccoli Tots are a fun and healthy play on tater tots made with finely chopped broccoli in place of potatoes. I'd say that the most important part about making these is to make sure you get as much liquid out of the broccoli as possible before mixing it with the other ingredients. If not, they'll just fall apart and turn out soggy. Still tasty, but not as good as when they get that little bit of crisp on the outside. These little bite-sized broccoli tots would be great served as a size dish alongside Homemade Crunchy Baked Fish Sticks or Oven Fried Panko Crusted Chicken Drumsticks. STRAWBERRY CHEESECAKE Desserts are one of my weaknesses. You won’t be able to resist this cheesecake, with its fresh sliced strawberries and light and fluffy texture! Adding the sour cream, sugar and vanilla to the top of the cheesecake created a light and creamy topping with a slight tartness that complemented the fresh berries very well. It was DIVINE!! I was so happy with the results that I’ve decided that any time a make a cheesecake with berries I will be using sour cream on top! This recipe is “officially” for a strawberry cheesecake but you could definitely use any combination of fresh berries that you like. This time I just opted for slices of strawberries place on top, but I think next time I may add some fresh raspberries as well. Marinated chicken thighs are grilled to perfection and served with warmed corn tortillas, pico de gallo, and cilantro. The past two weeks we have been using our grill to make dinner almost every single night. We’re a little obsessed. Taco Pizza Recipe I’m always on the lookout for simple recipes that my family will enjoy, especially when it comes to dinner. I love to cook but there are many days when I don’t have an hour+ to prepare a meal. With summer on the horizon and lots of family fun planned, I’ve been searching for quick and easy family dinners.  That’s when I found and adapted this Taco Pizza recipe.  With a cream cheese/sour cream “sauce” and spicy taco flavor, Taco Pizza is a great as an easy family dinner or a tasty appetizer. Well, I asked the same thing when Christie asked me if I wanted to try out something different for taco night. It seemed to me that it was just like a quesadilla if you make them this way – but I was proven wrong. It’s not. When we make quesadillas it’s definitely mostly cheese.
